Sour Cream Raisin Bars

Ingredients (Oat Crust & Topping:)

 
  • 1 ¾ cups old fashioned or quick-cooking oats, uncooked
  • 1 ¾ cups all -purpose flour
  • 1 cup packed brown sugar
  • 1 cup butter, softened
  • 1 teaspoon baking soda

Directions

 

Preheat oven to 350 degrees.  

Prepare oat crust and topping:  In large bowl, with hand, mix flour, oats, brown sugar, butter and baking soda until the mixture comes together.  Use two thirds of this mixture for the oat crust. With hand, press mixture evenly onto bottom of 9 by 15 pan to form a crust.

Bake about 10 minutes or until light brown.  Cool on a wire rack.  

Prepare filling:

Sour Cream Raisin Filling:

  • 4 eggs yolks
  • 1 ½ granulated sugar
  • 3 Tablespoons corn starch
  • 2 cups sour cream
  • 2 ¾ cups raisins

In a saucepan, cook egg yolks, sugar, corn starch, sour cream and raisins carefully over medium heat for about 5 to 10 minutes, until thick.  Pour over oat crust; then top with topping mixture that has been set aside.  

Bake at 350 degrees for 20 minutes.

About five years ago, while serving at a church function, a friend and I really got hooked on these Sour Cream Raisin Bars!  I don’t know how many pans of these we each made and shared that winter—too many for our own good!! Every time I come across this recipe—it brings back great memories…
