Nisi's Oatmeal Crunchy Chewies

Ingredients

 
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ˝ teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cups crushed cornflakes or rice krispies
  • 1 cup coconut

Directions

 

In a mixing bowl, cream butter and sugars.  Add egg and vanilla; mix well.

Combine flour, baking soda and salt; add to creamed mixture and mix well.

Add oats, cornflakes/rice krispies and coconut.  Shape into 1-inch balls and place on 2 inches apart on greased baking sheets.  Flatten with a glass dipped lightly in flour.

Bake at 350 degrees for approximately 8-10 minutes or until lightly browned, remove to wire racks to cool.

After eating an Oatmeal Raisin Cookie at The Paradise Bakery and Café in Scottsdale, AZ, I just had to try to emulate it-- but without the raisins (I love raisins, but I love oatmeal more…). This is the closest I’ve come so far…they are oatmealy, but also just a bit crunchy and also a bit chewy.  I also like this concoction because it doesn’t have cinnamon in it.  Too often a wonderful oatmeal recipe has cinnamon; I strongly feel that oatmeal can stand on its own!
