Oatmeal Coconut Freezer Cookies

Ingredients

 
  • 2 cups butter
  • 2 cups brown sugar
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon salt
  • 4 cups flour
  • 2 teaspoons soda
  • 1 teaspoon vanilla
  • 1 cup coconut
  • 6 cups oatmeal

Directions

 

Cream butter and sugars.  Add eggs and vanilla.  Then add flour, salt, soda. mix well.  Add coconut and oatmeal.  Mix well.  Roll into convenient sized rolls for freezing.  

Slice cookies from the cookie roll to bake as needed. Slice them thin for a crispy cookie, and thicker for a chewy cookie. Bake at 350 degrees until lightly browned.

This makes a nice big batch of dough that’s great to have on hand in the freezer.  

Beware!  The cookie rolls are oh, so tempting! Even frozen!
