Good Ol' Oatmeal Butterscotch Chip Cookies

Ingredients

 
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups quick or old-fashioned oatmeal
  • 1 2/3 cups butterscotch chips

Directions

 

Preheat oven to 375 degrees.  Combine flour, baking soda and salt in small bowl.  Beat butter, granulated  sugar, brown sugar, eggs and vanilla in a large mixing bowl. Gradually beat in flour mixture. Stir in oats and chips.

Drop by rounded tablespoonfuls onto ungreased baking sheet.  Bake for seven to eight minutes for a chewy cookie, or nine to ten minutes for a crisp cookies.   Cool on cookie sheet for 2 minutes.

 

This recipe can also be used for Bars:  Grease a 15 in. by 10 in. jelly roll pan. Spread cookie dough in pan.  Bake for 18 to 22 minutes or unitil light brown. Cool.
