Microwave Apple Crisp

Ingredients:

 
  • 1/4 cup sugar
  • 1 cup plus 1 tablespoon all-purpose flour, divided
  • 1 1/2 teapsoons ground cinnamon, divided
  • 6 cups cored, peeled and sliced apples
  • 1 cup quick-cooking rolled oats
  • 1/4 cup packed brown sugar
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup butter, softened
  • 1/4 cup coconut
  • 1/4 cup pecans or almonds

Directions

 

In mixing bowl, combine 1/4 cup sugar, 1 tablespoon flour and 1/2 teaspoon cinnamon.  Toss with apples to coat.  

Turn coated apples into 8 in. by 8 in. by 2 in. microwave safe dish.  

In mixing bowl combine remaining flour, oats, brown sugar, remaining cinnamon and nutmeg.  Cut in softened butter until mixture is crumbly, stir in coconut and nuts.  

Sprinkle topping over apples.  Microwave for 12 to 14 minutes, or until apples are tender.  

Makes 6 to 8 servings.

This is a great microwave recipe for a wonderfully rich Apple Crisp.

Don't forget the ice cream! Try it with Dulche de Leche from Haagen Dazs!
