Chocolate Chip Oatmeal Cake

Ingredients

 
  • 1 package Chocolate Chip Cake Mix
  • 11/4 cups quick-cooking oats
  • ¼ packed brown sugar
  • 3 eggs
  • 11/2 cups water
  • 1/3 cup vegetable oil
  • Browned Butter Frosting

Directions

 

Heat oven to 350 degrees.  Grease and flour rectangular pan 13x9x2 inches.

Beat all ingredients except frosting in large bowl on low speed, scraping bowl constantly, until moistened.  Beat on medium speed, scraping bowl occasionally, 2 minutes.  

Pour batter into pan.  Bake until top springs back when touched lightly in center, 25 to 30 minutes; cool.  Frost cake with Browned Butter Frosting.

BROWN BUTTER FROSTING

  • 1/3 cup butter
  • 3 cups powdered sugar
  • 11/2 teaspoons vanilla
  • About 2 tablespoons milk

Heat butter in saucepan over medium heat until delicate brown, remove from heat. Stir in powdered sugar.  Stir in vanilla and milk; beat until frosting is smooth and of spreading consistency.

I have made this cake numerous times when I’ve been called on to provide a cake at church functions or club meetings.  I love it because it is so quick because the base is a cake mix, then with just a few more ingredients and it becomes rich and scrumptious. When I’m really in a hurry, I just buy a can of Chocolate Chip Frosting and frost it with that. Every time I have made this cake I’ve been asked for the recipe. This recipe was on the back of a Chocolate Chip Cake Mix box back in the ‘80’s.
