Blueberry Oatmeal Muffins

Ingredients

 
  • 1 cup quick-cooking oats
  • 3/4 cup orange juice or skim milk
  • 1 cup all purpose or whole wheat flour
  • 1/3 cup sugar
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup canola oil
  • 2 egg whites, slightly beaten
  • 1 cup fresh blueberries (or frozen, thawed)

Directions

 

Heat oven to 400 degrees.  Prepare muffin cups with paper cups or grease them.  Mix oatmeal and orange juice or skim milk in a large bowl.  Stir in remaining ingredients, except blueberries.  Fold in berries.  

Bake 18 to 22 minutes.
